Henshin offers Sayulita's first Japanese fine dining experience. The experienced chef of Henshin Sushi Restaurant and Bar creates a menu-free dining experience. Allow his expertise to guide the night as he prepares each item for each guest specially, based on their preferences, desires, or cravings that day. Henshin Sushi Restaurant and Bar provides Omakase Service. This is a traditional Japanese dining style in which the chef provides a meal tailored to your preferences based on availability, budget, taste, and seasonality. It is a very intimate and very human experience that is best thought of as a verbal and non-verbal dialogue between you and the chef.
A La Carte and To-Go Services from 2 pm to 10 pm for lunch and dinner.

While it’s not a cheap meal, it is absolutely a great value. My wife and I both noted that a similar meal in LA (where we live) would easily cost 2-3x what we paid at Henshin, and we’d be lucky to get such attentive service. This was our favorite dinner in Sayulita.
Ok… Ok… I know what you’re thinking. As if anyone who knows the craft, had the best sushi they’ve ever had in Mexico. But we’ve had sushi all over the world. We spent three weeks in Japan, having sushi nearly every day by some of the best sushi chefs to ever do it.
The chef pride himself on taking new approaches on something that’s been done for 2000 years and he nails it head on!
I will tell you we did come in low season so we basically had a private dinner with the chef, so that definitely made the experience special. But if I would’ve had that exact sushi made that exact way in a crowded restaurant, I’d feel the same..
I fully believe the chef is going places and you need to come here and catch him before he’s too expensive.
The wagyu nigiri and the eel nigiri where absolutely incredible. The wagyu was prepared with truffle oil and the eel with a miso glase, just jaw-droppping.
