Chef’s Pick: Mexotik Cocina Mexicana Creativa Catering and Private Chef Services

Dish: Mango Lasagna and Raspberry Citrus  Sauce 

Ingredients:

1 can of condensed milk 

1 Pack of cream cheese 

4 Mangoes 

Zest of 1 lemon

2 packs of vanilla or coconut cookies, its best to use ones that are rectangular in shape. I won’t put a specific brand, just look for the one you like the best.

Steps: Add the condensed milk, cream cheese, chopped mangoes and lemon zest to a blender. Blend for a few minutes until the mixture is smooth with no lumps. Then in a rectangular glass container, place a layer of cookies until the bottom of the container is covered. Then add a layer of the blended mixture on top of your cookie layer. Repeat this step until you there is no mixture left.
Put it in the freezer for about 2 hours and it’s done! You can make the raspberry sauce while you wait.

Raspberry Citrus Sauce Ingredients:

1 pack of Wild berries

1 Lime

1 TBSP Brown Sugar

Steps: To complement this dessert you can blend a pack of wild berries with the juice of one lime and 1 tbsp of brown sugar, blend until smooth and then put in a pot on medium heat to reduce and you will get a homemade coulis. To serve pour some raspberry sauce onto the plate and place the lasagna over the top!

Simple and delicious!
